Dr. Li achieved her Master’s degree in January 2006 from Jiagnan University, and obtained her PhD in December 2016 from Deakin University. She worked at Coconut Research Institute since July 2006. She was mainly engaged in the processing of virgin coconut oil (VCO), palm oil, industrial production of VCO, oil quality control and their functional property analysis and activity evaluation from 2006 to2012. Her PhD project is about chemical synthesis, characterization and applications in regenerative medicine of self-assembling peptide scaffold. During her PhD, she won Coltman Prize: Medical Researcher of the year awarded by Faculty of Science, Engineering and Built Environment, Deakin University and Early Career Researcher Award (up to 5 years post PhD) awarded by Royal Australian Chemical Institute. Now her research focused on functional food and post-harvest physiology, storage and transport technology and betel nut processing. She has published 25 papers, in which 7 SCI papers. She has undertaken or participated 10 national, provincial and ministerial-level and key horizontal cooperation projects, won the 3rd prize awarded by China Grain and Oil Association.
